Making bread is a lost art. Most people on earth eat some kind of bread daily but with each generation, less of us know how to make it.
Making bread is much less about skill then it is about setting aside a day to revolve around baking. Begin by following the recipe, and with each consecutive batch you begin to understand bread, and the complex relationship between yeast, sourdough starter, water, flour and time (that most important of ingredients). Once you feel a level of comfort with the ingredients and the rhythm of the bread-baking day, you can add ingredients and experiment with various starters and infinite combinations of flour.
